## Description
**POSITION SUMMARY:**
Under the direction of the F&B Manager/Sous Chef/Lead Cook, this position will serve, clean, prepare food and complete other related tasks with emphasis on food preparation and on independent work.
**DUTIES AND RESPONSIBILITIES:**
- Must follow procedures, schedules, and assignments precisely.
- Must be able to follow basic recipes and cooking methods for all food preparation according to food handlers’ guidelines.
- Must be able to perform repetitive tasks and be able to adapt to changing procedures, job duties and responsibilities.
- Ability to plate with regard to appealing and consistent visual presentation.
- Maintain cleanliness and organization of the kitchen area.
- Ability to remain on site until all tasks are completed to the required standard.
- Support the team during busy service hours by efficiently managing multiple orders.
- Exhibits reliability in attendance and sustains a professional, upbeat attitude during all working hours.
- Must be able to communicate with prep cooks and servers.
- Must have knowledge and ability to use kitchen equipment and follow all safety guidelines for the operation of all kitchen equipment, safely break down, clean, and reassemble equipment.
- Use sharp objects to cut or peel food items.
- Must be able to work in a fast pace and hot environment with ability to multitask.
- Must be able to stand and walk for long periods of time.
- Must be able to work all shifts and holidays.
- Must practice good personal hygiene.
- Ability to follow sanitation practices, safe food storage, and correct procedures for handling refrigerated, frozen and dry stored items.
- Follow proper opening and closing procedures and cleanup of kitchen area.
- Must be able to label and date all food stored and rotate as needed.
- Report any food items that need to be ordered or any spoilage of product to the supervisor and manager on duty.
- All other duties as assigned by F&B Management.
## Qualifications
**QUALIFICATIONS:**
- Minimum one year experience in kitchen preparation and cooking.
- Knowledge of food production and menu planning
- Knowledge and commitment to use proper sanitation and food preparation procedures as outlined in casino and department handbook, HACCP and OSHA.
- Organized and attentive to details
- Must be able to lift 50 lbs.
- Ability to be a team player and motivator.
- Must be able to complete the 90-day introductory period in consecutive days as scheduled.
- Must be at least 18 years of age.
**CERTIFICATE & LICENSES:**
- Ability to obtain and maintain a Cahuilla Gaming License and submit to random drug/and or alcohol testing.
- High school diploma or the equivalent (preferred)
- Ability to obtain a California State Driver’s License.
- Ability to complete necessary Casino Essentials courses to carry out the job responsibilities.
- Food Handler Certificate (required).

Work environment requires significant standing, bending, kneeling, lifting and reaching. Specific vision abilities required by the job include close vision, distance vision, color vision, peripheral vision, depth perception, and the ability to adjust focus.
While performing the essential functions of this position, the employee is occasionally exposed to outdoor weather conditions and required to move about the Casino floor and exposed to a non-smoke free environment.
Cahuilla Casino Hotel is committed to a drug and alcohol-free workplace. Any job offer is conditional upon successful passing of a pre-employment drug test and must qualify for a Cahuilla Gaming License, which includes an extensive background security check.
If none of the applicants should meet the stated qualifications, applicants whose education and experience are less than the stated requirements, may be interviewed and hired provided the applicant hired submits a formal written training plan within (30) thirty days which can be completed within a reasonable time agreed upon by the supervisor and the applicant. Applicants who are hired and fail t meet the agreed upon formal training program, will be discharged upon failure to complete the specified training as scheduled.
